The wines of Domaine aux Moines
come from Tessa's know-how.
The cellar is her domain since
that she took over from her mom.
Chenin is harvested by hand in crates. This method makes it possible to obtain a healthy vintage when it arrives at the winery. More than rigorous sorting is done in the vineyard. Only the perfect berries arrive at the winery.
The musts are then placed in stainless steel vats, then a large part of the harvest will carry out its alcoholic fermentation and aging in barrels.
After 18 months of aging, the final blend will be bottled by a service provider.
Only Tessa has the secret that allows her to obtain wines of such quality. . .
The Cabernets are harvested, de-stemmed and spun by hand in the only plot of red at La Roche aux Moines.
